Emulgaatin

Chemical features and behavior: Emulgaatin is described as having a single hydrophilic head group and one or more hydrophobic alkyl tails, enabling it to reduce oil–water interfacial tension and form micelles or vesicles. In simulations, it exhibits a critical micelle concentration within the low millimolar range and can stabilize oil-in-water emulsions under moderate shear.
