Elintarviketieteessä

Elintarviketieteessä, or food science in English, is an interdisciplinary field concerned with the study of food. It encompasses a broad range of topics related to the physical, biological, and chemical makeup of food, as well as the application of this knowledge to food processing, preservation, quality control, safety, and development. The discipline draws upon principles from chemistry, biology, physics, engineering, and nutrition to understand how food is produced, transformed, and consumed.

The core objectives of food science include ensuring the safety and nutritional quality of food products, extending their shelf life through various preservation techniques, and enhancing their sensory properties such as taste, texture, and aroma. Food scientists investigate the effects of processing methods like heating, freezing, drying, and fermentation on food components. They also study the interactions between different food ingredients and their impact on the final product.

Key areas within food science include food chemistry, focusing on the molecular structure and reactions of food components; food microbiology, examining the role of microorganisms in food spoilage and fermentation, as well as foodborne pathogens; food engineering, applying engineering principles to food processing equipment and operations; and food analysis, developing and utilizing methods to assess food composition and quality.
