Distillatieketels, also known as stills, are vessels used in distillation processes. These processes separate components of a liquid mixture by selective boiling and condensation. The basic principle involves heating the mixture to vaporize the more volatile components, then cooling the vapor to condense it back into a liquid, thus enriching the concentration of those components. Distillatieketels come in various designs, each suited for different applications.

Pot stills are one of the simplest forms. They consist of a single boiling vessel and a condenser. This type of still is often used for producing spirits like whiskey and rum, where flavor complexity is desired and multiple distillations may be required to achieve the desired alcohol content. The simpler design can lead to a more flavorful, albeit lower-proof, distillate.

Column stills, also known as continuous stills or patent stills, are more complex. They consist of a tall vertical column with trays or plates. Vapor rises through the column and condenses on the trays, while liquid flows down. This design allows for more efficient separation and continuous operation, producing a higher-proof and purer distillate. Column stills are commonly used for producing neutral spirits, vodka, and industrial ethanol.

The material of construction for distillatieketels is crucial. Copper is a traditional and popular choice due to its excellent heat conductivity and its ability to react with sulfur compounds, which can impart undesirable flavors. Stainless steel is another common material, especially for industrial applications, due to its durability, corrosion resistance, and ease of cleaning. Glass is sometimes used for laboratory-scale distillations due to its inertness.
