Deoksidasjonsmiddel, also known as antioxidants, are substances that inhibit or prevent oxidation reactions in living organisms. Oxidation is a chemical reaction that involves the loss of electrons from a molecule, often leading to the formation of reactive oxygen species (ROS) such as superoxide, hydrogen peroxide, and hydroxyl radicals. These ROS can cause damage to cellular components, including lipids, proteins, and DNA, contributing to various diseases and aging processes.

Antioxidants neutralize ROS by donating electrons or hydrogen atoms to them, thereby preventing further oxidation. They can be classified into two main categories: enzymatic antioxidants and non-enzymatic antioxidants. Enzymatic antioxidants, such as superoxide dismutase (SOD), catalase, and glutathione peroxidase, are proteins that use specific enzymes to detoxify ROS. Non-enzymatic antioxidants, on the other hand, include small molecules like vitamins C and E, carotenoids, and polyphenols, which directly scavenge ROS.

The role of antioxidants in maintaining health is well-established. They play a crucial part in protecting cells from oxidative stress, which is implicated in numerous diseases, including cardiovascular diseases, neurodegenerative disorders, and certain types of cancer. Additionally, antioxidants contribute to the aging process by mitigating the accumulation of oxidative damage over time.

In dietary supplements and functional foods, antioxidants are often used to enhance the body's natural antioxidant defenses. However, it is important to note that while antioxidants can be beneficial, excessive consumption of certain antioxidants, such as vitamin C, may lead to adverse effects. Therefore, a balanced approach to antioxidant supplementation is recommended, considering both the type and amount of antioxidants consumed.
