Bingsu

Bingsu is a Korean shaved ice dessert. It is typically made with finely shaved ice and a variety of toppings, and it is especially popular during Korea's summer months. The dish is widely available in cafes, dessert shops, and food stalls across South Korea and has also gained popularity internationally through Korean cuisine.

The traditional form, patbingsu, centers on shaved ice topped with sweetened red beans (pat). Other common components include chopped fruit, condensed milk, and small chewy pieces of rice cake. The result is a contrast of cold, fluffy ice with sweet, creamy, and chewy textures.

There are many modern variations. Fruit-based bingsu add fresh fruit or fruit syrups; other varieties incorporate ingredients such as green tea (matcha), coffee, chocolate, or injeolmi (roasted soybean flour-coated rice cake) desserts. These variations retain the shaved-ice base while highlighting different flavors and toppings.

Preparation typically involves shaving ice into a fine, snow-like texture and layering toppings to taste. Bingsu is commonly served in bowls or tall cups and may be finished with condensed milk, syrup, or syrup drizzles. It is regarded as a refreshing summer treat in Korea and has influenced similar desserts abroad.
