Appetizers

In Italian cuisine, antipasti feature olives, cured meats, vegetables, and grilled seafood. Spanish tapas are small dishes that can be hot or cold and are often shared. In the Middle East, mezze offers a selection of small savory dishes. In East Asian cuisine, dim sum or small plates provide a similar function. Vegetarian and vegan options are common and increasingly emphasized.

Serving practices vary, but appetizers are usually served in small portions, arranged attractively, and consumed before heavier courses or during social gatherings with beverages. They can set the tone for a meal by introducing flavors, textures, and regional ingredients, and may be paired with wines or cocktails.
