Amphiphilní refers to molecules that possess both hydrophilic and hydrophobic properties. Hydrophilic parts of the molecule are attracted to water, while hydrophobic parts repel water and are attracted to nonpolar substances like oils and fats. This dual nature is a fundamental characteristic that allows amphiphilic molecules to play crucial roles in biological systems and industrial applications.

In biological contexts, amphiphilic molecules are essential components of cell membranes. Phospholipids, the primary building blocks of these membranes, have a hydrophilic head and two hydrophobic tails. They arrange themselves in a bilayer, with the hydrophilic heads facing the aqueous environments inside and outside the cell, and the hydrophobic tails clustering together in the interior, shielded from water. This structure creates a barrier that controls the passage of substances into and out of the cell. Other biological amphiphiles include bile salts, which aid in fat digestion, and lipoproteins, which transport lipids in the bloodstream.

Industrially, amphiphiles are widely used as surfactants. Surfactants reduce the surface tension between two liquids, or between a liquid and a solid, which is why they are found in soaps, detergents, and emulsifiers. For example, soap works by surrounding grease particles with its hydrophobic tails, while its hydrophilic heads face the surrounding water, allowing the grease to be washed away. Emulsifiers, like those found in mayonnaise or lotions, stabilize mixtures of oil and water that would otherwise separate. The specific balance of hydrophilic and hydrophobic character, often quantified by the Hydrophilic-Lipophilic Balance (HLB) scale, determines the effectiveness of an amphiphile for a particular application.
