Advocaat

Advocaat is a traditional Dutch liqueur. It is a custard-like beverage made from eggs, sugar, vanilla, and brandy or other spirits. The texture is thick and creamy, similar to custard, and the color ranges from pale yellow to deep gold. It is typically enjoyed as a dessert liqueur, in coffee, or as a component in cocktails.

The base is egg yolks with sugar and vanilla; brandy or cognac provides alcohol and character. Color is achieved mainly by yolks and sometimes artificial coloring; saffron is occasionally used in historic recipes. Modern versions may include stabilizers and emulsifiers to maintain texture.

Advocaat originates from the Netherlands, with origins dating back several centuries. The name advocaat means lawyer or advocate in Dutch; anecdotal origin claims it was served in religious courts or law courts, though the exact genesis is uncertain. It is widely consumed in the Netherlands and Belgium, and is also found in other parts of Europe.

Best served well chilled in small glasses; can be enjoyed neat, on the rocks, or as an ingredient in desserts and cocktails. It is commonly paired with sweet pastries, cookies, or coffee. Seasonal observations: often associated with Christmas and Easter in the Netherlands.

Most advocaat is around 14-20% ABV. It should be refrigerated after opening and consumed within weeks for best quality; unopened bottles can keep longer if stored away from light and heat. There are variations including lighter versions and region-specific brands.
