Återfrysning refers to the process of freezing food that has previously been thawed. This can occur for various reasons, including power outages, improper storage, or intentional thawing and refreezing. The safety and quality of refrozen food depend heavily on how it was handled.

If food was thawed in the refrigerator and then refrozen before it began to spoil, it is generally safe to consume. However, refreezing can impact the texture and quality of the food. Ice crystals formed during the initial freezing can damage the cell structure, leading to a softer or mushier consistency upon thawing and refreezing. This is particularly noticeable in meats and certain vegetables.

Refreezing food that was thawed at room temperature or in a microwave is not recommended due to the increased risk of bacterial growth. When food is left at temperatures between 4°C (40°F) and 60°C (140°F), bacteria can multiply rapidly. If such food is then refrozen, these bacteria may survive and proliferate further upon subsequent thawing, posing a health risk.

To minimize quality degradation when refreezing safe foods, it's best to do so as quickly as possible after thawing. Packaging should be airtight to prevent freezer burn. While refreezing is often a necessity to avoid waste, consumers should be aware of the potential changes in texture and the importance of safe thawing practices.
