This process is primarily carried out by aerobic bacteria belonging to the genus Acetobacter. These bacteria are ubiquitous in nature and are commonly found in environments rich in alcohol, such as fruits, flowers, and fermented beverages.

The fermentation occurs in the presence of oxygen. The bacteria oxidize ethanol, an alcohol, to acetaldehyde, and then further oxidize acetaldehyde to acetic acid. The overall chemical reaction can be simplified as: C2H5OH + O2 → CH3COOH + H2O. This process is the basis for the production of vinegar, a common condiment and household substance. Different types of vinegar, such as wine vinegar, cider vinegar, and spirit vinegar, are produced by the acetic acid fermentation of the respective alcoholic precursors.

The efficiency and speed of acetic acid fermentation are influenced by several factors, including temperature, oxygen availability, and the concentration of ethanol. Optimal temperatures for Acetobacter growth and activity typically range from 25 to 30 degrees Celsius. Inadequate oxygen supply can lead to incomplete oxidation or the production of unwanted byproducts. The concentration of acetic acid produced can also inhibit the bacteria, meaning that successful fermentation often involves carefully managing these conditions to avoid self-toxicity. Historically, acetic acid fermentation has been crucial for food preservation and flavoring, and it remains an important industrial process today.
