Vesi-öljy refers to a common immiscible liquid mixture. In this combination, water and oil do not dissolve into each other and instead form distinct layers or a dispersed emulsion. This phenomenon is due to the differing polarity of water and oil molecules. Water is a polar solvent, meaning its molecules have a partial positive and a partial negative charge, allowing them to attract and dissolve other polar substances. Oil, on the other hand, is nonpolar, lacking significant charge separation in its molecules. Consequently, oil molecules are not attracted to water molecules and are repelled by them, leading to their separation.
The degree of separation can vary. In simple vesi-öljy mixtures, the oil typically floats on top of
