Syrahämmare is a term used in Finnish to describe substances or factors that inhibit or slow down the fermentation process, particularly in winemaking. These inhibitors can arise naturally or be introduced intentionally to control the rate and extent of fermentation.

Natural syrahämmare can include compounds present in the grape must itself, such as certain phenolic compounds or high levels of sulfur dioxide, which can be naturally occurring or added during processing. High sugar concentrations can also act as a syrahämmare, as yeast activity can be limited when the osmotic pressure becomes too high. Low temperatures are another significant natural inhibitor, as yeast metabolisms are significantly slowed down in cold environments.

Intentional use of syrahämmare is common in winemaking to achieve specific styles or prevent spoilage. For example, carefully controlled chilling can be employed to halt fermentation at a desired level of residual sugar, creating sweeter wines. Sometimes, specific yeast strains are selected for their lower fermentation vigor, effectively acting as syrahämmare. In other contexts, antimicrobial agents might be added, though this is less common and often regulated.
