This flow is primarily driven by pressure differences within the tree, which are influenced by factors such as temperature fluctuations and atmospheric pressure.

The process of sap flow, or sugflöde, begins in late winter and early spring when temperatures rise above freezing during the day and drop below freezing at night. This diurnal temperature cycle creates pressure within the tree's xylem tissue, forcing the sap to move. The sap, a dilute sugar solution, is then collected through taps inserted into the trees.
