Smedjenje is a term used in several South Slavic languages, notably Croatian, Serbian, and Bosnian, to denote browning or the process of turning something brown. The root is smeđi, meaning brown, and smedjenje is formed from that root through a common verb-noun pattern in these languages.

In cooking, smeđenje refers to browning ingredients in fat or oil over heat until their surface develops a brown color and richer flavor. It is a preliminary step in many recipes and is closely related to sautéing, the Maillard reaction, and the development of aroma and taste. Common examples include browning onions, meat, mushrooms, or flour (as in a roux).
