Raastimen is the Finnish genitive form of raastin, a kitchen grater. A raastin is a tool used to shred or grate foods into fine strands or textured pieces. It is commonly employed for cheese, carrots, potatoes, citrus zest, chocolate, and other vegetables and fruits. In Finnish cooking, raastin is a standard utensil in both home and professional kitchens.

Most graters described by the term raastin are manual and come with a handle and a body that may be box-shaped, flat, or curved, featuring multiple grating surfaces. Surfaces vary in fineness: fine for zest or delicate shreds, medium for general grating, and coarse for larger shreds. Variants include box graters with several sides, flat handheld graters, microplane or zester-style graters, and rotary or drum-style devices used with a turning action.

To use a raastin, select the appropriate surface, hold the food securely, and move it across the grating surface with even pressure. Keep fingers away from the blades and consider a protective glove or finger guard when grating small items. After use, clean promptly to remove residue. Most raastimet are made of stainless steel and are dishwasher-safe, though repeated dishwashing can dull sharp edges over time. Dry thoroughly to prevent rust and store in a dry place.
