Polifenolu is a broad class of naturally occurring organic compounds characterized by the presence of multiple phenol units. Phenols themselves are compounds containing a hydroxyl group bonded directly to an aromatic hydrocarbon group. In polyphenols, these phenol units are linked together, forming more complex structures. These compounds are widely distributed in the plant kingdom, found in fruits, vegetables, grains, legumes, tea, coffee, chocolate, and wine.

The biosynthesis of polyphenols in plants serves various functions, including defense against pathogens and herbivores, UV protection, and as pigments. They are known for their antioxidant properties, meaning they can neutralize harmful free radicals in the body, which are unstable molecules that can damage cells and contribute to aging and various diseases. This antioxidant capacity is attributed to their ability to donate electrons to free radicals.

Polyphenols are categorized into different groups based on their chemical structure. Key classes include flavonoids, phenolic acids, stilbenes, and lignans. Flavonoids are perhaps the most well-known group, further divided into subclasses such as anthocyanins (responsible for red, purple, and blue colors in plants) and flavanols (found in tea and cocoa). Phenolic acids are simple compounds like gallic acid and caffeic acid. Stilbenes include resveratrol, famously found in grapes. Lignans are more complex structures often found in seeds.

Research into polyphenols is ongoing, with much attention paid to their potential health benefits. Studies suggest associations between regular consumption of polyphenol-rich foods and reduced risk of chronic diseases, including cardiovascular disease, certain cancers, and neurodegenerative disorders. However, it is important to note that much of this evidence comes from observational studies, and more robust clinical trials are needed to establish definitive causal relationships and optimal intake levels.
