omenalohko
Omenalohko, meaning "apple block" in Finnish, refers to a traditional Finnish confectionery. It is characterized by its firm, chewy texture and is often flavored with apple. The base of omenalohko is typically made from sugar, glucose syrup, and water, cooked to a hard-crack stage. Gelatin or pectin is often used to achieve the desired chewiness. Once the sugar syrup has reached the correct temperature, flavorings, most commonly apple extract or juice, and sometimes coloring are added. The mixture is then poured into a flat mold and allowed to cool and set. After hardening, it is cut into small, bite-sized blocks, hence the name.
The production of omenalohko can be done both commercially and at home. Variations exist, with some recipes
