Nitrosierende is the German term describing substances or processes that introduce a nitroso group (–NO) into a molecule, a reaction class commonly called nitrosation. In English-language chemistry, nitrosation refers to the formation of N-nitroso or S-nitroso compounds by transferring a nitroso moiety to nucleophilic sites such as amines or thiols. The term nitrosierende can describe reagents, catalytic systems, or reaction conditions that effect this transformation.

Chemistry and mechanisms. Nitrosation typically involves electrophilic nitrosating agents, which deliver the –NO+ fragment to a substrate. Common sources include nitrosyl chloride (NOCl), nitrosylsulfuric acid, and in situ generated nitrous acid (HNO2) from nitrite salts under acidic conditions. Depending on the substrate, nitrosation can yield N-nitroso compounds (from amines), O-nitrosation (in some phenolic or enolate systems), or S-nitrosothiols (RS–NO) from thiols. Nitrosating processes are used in targeted organic synthesis to access N-nitroso or S-nitroso derivatives, which serve as intermediates in medicinal chemistry and material science. Biologically, S-nitrosation plays a role in nitric oxide signaling and protein regulation, while N-nitrosation can create compounds with distinct biological activities. In food chemistry, nitrosation is a concern because nitrosamines, formed from nitrosating amines in cured meats and other foods, are potential health hazards and are subject to regulatory scrutiny. Safety and control of conditions are important to minimize unwanted nitrosation and to manage its beneficial uses.
