Monityydyttymätön describes a type of fatty acid that contains more than one carbon-carbon double bond in its hydrocarbon chain. This structural characteristic distinguishes it from monounsaturated fatty acids, which have only one such double bond, and saturated fatty acids, which have none. The presence of multiple double bonds introduces kinks or bends in the fatty acid chain, which affects its physical properties. Typically, polyunsaturated fatty acids are liquid at room temperature due to these bends preventing efficient packing.

Polyunsaturated fatty acids are further classified into families based on the position of the double bonds. Two prominent families are omega-3 (or n-3) and omega-6 (or n-6) fatty acids. The designation refers to the position of the first double bond relative to the methyl end of the fatty acid chain. Essential fatty acids, such as alpha-linolenic acid (an omega-3) and linoleic acid (an omega-6), cannot be synthesized by the human body and must be obtained through diet. These essential fatty acids are precursors to other important polyunsaturated fatty acids, including EPA and DHA (omega-3s) and arachidonic acid (omega-6).

These fatty acids play crucial roles in various physiological processes, including cell membrane structure, inflammation regulation, blood clotting, and brain development. Dietary sources rich in polyunsaturated fatty acids include fatty fish, nuts, seeds, and vegetable oils.
