Mezcalero is a Spanish word that translates to "mezcal maker" or "mezcal producer." It refers to the individual or group responsible for the traditional production of mezcal, a distilled alcoholic beverage made from the agave plant. The term "mezcalero" carries significant cultural weight, as the craft of mezcal making is deeply rooted in the history and traditions of certain regions in Mexico, particularly Oaxaca.

A mezcalero is involved in every step of the mezcal production process. This typically begins with the cultivation and harvesting of agave plants, often specific varieties suited for mezcal. The heart of the process involves roasting the agave piñas (the core of the plant) in underground pits, which imparts a characteristic smoky flavor to the spirit. Following roasting, the cooked agave is crushed, traditionally using a stone wheel called a tahona, to extract the sugary juice. This juice is then fermented, often in wooden vats, before being distilled, usually twice, in copper or clay pot stills.
