Mantecatúrával is a Hungarian-language term used to describe the practice of finishing certain hot dishes with mantecatura, an Italian culinary technique of emulsifying butter (and sometimes cheese) into the dish to create a smooth, creamy, glossy texture. The term derives from Italian mantecare and mantecatura, adapted in Hungarian with the suffix -val meaning “with.”

In practice, the technique is most closely associated with risotto, where it is performed after cooking: the pan is removed from heat, butter is added in small pieces, and the mixture is vigorously whisked or stirred, often with grated Parmigiano-Reggiano, until the grains become cohesive and glossy. The method can also be used for other starches or creamy preparations, such as polenta, mashed potatoes, or certain sauces, to impart richness and sheen.

Key considerations include adding fat gradually, keeping the dish warm but not boiling, and using high-quality butter or fat. Overheating or overheating the sauce can cause separation, so the process is typically conducted off the heat.

Mantecatura, and by extension mantecatúrával, contributes to the velvety mouthfeel that characterizes many Italian-influenced dishes finished in this way. Variations may substitute olive oil for part of the butter or omit cheese depending on flavor goals or dietary restrictions.
