Kosherruokasäännöt, known in Hebrew as kashrut, are a set of Jewish dietary laws. These laws dictate which foods are permissible to eat and how those foods must be prepared. The primary source for these laws is the Torah, specifically passages in Leviticus and Deuteronomy.

Central to kashrut is the prohibition of consuming certain animals, such as pigs and shellfish. For permitted animals like cattle, sheep, and fowl, they must be slaughtered in a specific manner, a process called shechita, to ensure humane and efficient draining of blood. This ritual slaughter is performed by a trained professional called a shochet.

Another key rule is the separation of meat and dairy. These two categories of food cannot be cooked or eaten together. This separation extends to utensils, dishes, and cooking equipment, which must be kept distinct for meat and dairy. There are also waiting periods required between consuming meat and then dairy, or vice versa.

Fish with fins and scales are considered kosher, while crustaceans and mollusks are not. Fruits, vegetables, and grains are generally kosher, but they must be checked for insects, which are forbidden. Wine and grape juice also have specific kosher requirements, often necessitating supervision during production.

Observance of kosher laws varies among Jewish individuals and communities. Some adhere strictly to all aspects of kashrut, while others may observe certain laws more leniently. The purpose of these laws is multifaceted, encompassing spiritual, ethical, and communal aspects of Jewish life.
