Hydrofobicity refers to the physical property of a molecule that is repelled by water. The word "hydrophobic" literally means "water fearing." Substances that are hydrophobic tend to minimize their contact with water. This property arises from the fact that water molecules are highly polar and form strong hydrogen bonds with each other. Nonpolar molecules, which lack significant charge separation, are not attracted to polar water molecules and thus tend to aggregate together to minimize their exposure to the surrounding water.

In a mixture of water and a hydrophobic substance, the hydrophobic molecules will separate from the water, often forming a distinct layer. This is why oil and water do not mix. The hydrophobic effect is a major driving force in the formation of cell membranes, where lipid molecules (which are largely hydrophobic) arrange themselves to shield their nonpolar tails from the aqueous environment inside and outside the cell.

Surface hydrophobicity is also a key concept. Materials can be engineered to be hydrophobic, meaning water will bead up and roll off their surface. This is achieved by creating surfaces with low surface energy, often through chemical treatments or the creation of specific micro- or nanostructures. Hydrophobic surfaces find applications in self-cleaning materials, anti-fouling coatings, and waterproof fabrics. The degree of hydrophobicity can be quantified by measuring the contact angle of a water droplet on the surface. A higher contact angle indicates greater hydrophobicity.
