hydrofobicity
Hydrofobicity refers to the physical property of a molecule that is repelled by water. The word "hydrophobic" literally means "water fearing." Substances that are hydrophobic tend to minimize their contact with water. This property arises from the fact that water molecules are highly polar and form strong hydrogen bonds with each other. Nonpolar molecules, which lack significant charge separation, are not attracted to polar water molecules and thus tend to aggregate together to minimize their exposure to the surrounding water.
In a mixture of water and a hydrophobic substance, the hydrophobic molecules will separate from the water,
Surface hydrophobicity is also a key concept. Materials can be engineered to be hydrophobic, meaning water
