Harvest time is the period during which crops are gathered from the field once they have reached maturity and are suitable for storage, processing, or sale. It is crop-specific and region-dependent, and is shaped by climate, soil conditions, and farming practices. The timing is usually guided by physiological maturity and by post-maturity indicators such as moisture content, color, texture, and flavor.

For grains, harvest typically occurs when kernels have dried to an appropriate moisture level to minimize spoilage; often roughly between 12 and 20 percent moisture, depending on crop and storage facilities. Fruits and many vegetables are picked at peak ripeness or marketable ripeness, guided by color, firmness, and sugar content. Root crops and tubers are harvested when size and soil condition allow clean removal and storage viability.

Harvest can be done manually with sickles and baskets or with mechanized equipment such as combines, sugar-beet harvesters, or fruit-picking machines. Weather windows, labor availability, and field conditions influence the choice and timing.

Post-harvest handling is critical: crops are cleaned, sorted, dried if needed, cured, and stored in conditions that minimize spoilage and pest damage. Transport, processing, and packaging follow to meet market or processing requirements.
