Halotolerans refers to the property of organisms that can tolerate high salt concentrations but do not require salt for growth. In microbiology and related fields, halotolerant organisms can grow across a wide range of salinities, from low to moderately high salt, whereas halophiles require elevated salt levels to grow.

Halotolerant organisms are distinct from true halophiles. Halotolerants can survive in saline environments and often continue to grow when salt is present, but they can also thrive in freshwater or non-saline conditions. They are commonly found in soils, salted foods, coastal and saline waters, and other environments where salinity fluctuates. Some halotolerant bacteria and yeasts are important in food spoilage, fermentation, and industrial processes. Examples include certain species of Staphylococcus and Bacillus, as well as yeasts such as Zygosaccharomyces species, which are capable of growing in salted foods.

Mechanisms that enable halotolerance vary by organism. Many halotolerant microbes accumulate compatible solutes, such as glycine betaine or proline, to balance osmotic pressure without disrupting cellular processes. Others employ salt-out strategies, adjusting intracellular ion composition or employing robust membrane systems and stress response pathways. Some can switch between salt-dependent and salt-independent growth as environmental conditions change.

Applications and implications of halotolerance include understanding microbial ecology in saline habitats, managing spoilage in preserved foods, and sourcing enzymes and biomolecules that remain active in high-salt conditions for industrial use.
