Gustatorikus is a term used to describe gustation, the sensory modality concerned with the detection and interpretation of chemical stimuli in the mouth that give rise to taste. In scientific and clinical usage, gustation refers to the peripheral detection by taste receptor cells and the central processing that contributes to flavor perception.

Gustation begins in taste buds distributed on the tongue, including the fungiform, circumvallate, and foliate papillae, and in other regions of the oral cavity. Each taste bud contains taste receptor cells that transduce chemical stimuli into neural signals. The five widely recognized taste modalities are sweet, sour, salty, bitter, and umami; some research also explores additional or nuanced categories such as fatty taste.

Transduction mechanisms involve GPCRs for sweet, umami, and bitter tastes (encoded by T1R and T2R receptor families) and ion channels for salty and sour tastes. Signals are carried by cranial nerves VII (facial), IX (glossopharyngeal), and X (vagus) to the nucleus of the solitary tract in the brainstem, then to the ventroposterior medial nucleus of the thalamus and onward to the insular cortex and frontal operculum, regions collectively associated with the gustatory cortex.

Perception of taste is modulated by olfactory input, temperature, texture, and chemical context; age, medications, and certain diseases can alter taste sensitivity. Clinically, gustatorikus relates to disorders such as ageusia (loss of taste), hypogeusia (reduced taste), and dysgeusia (distorted taste). Research spans receptor biology, neural coding, and applications in flavor science and nutrition.
