Gustatif is an adjective derived from gustation, the sense of taste. It is used in physiology, neuroscience, and culinary science to describe processes, receptors, and perceptions that pertain to taste.

Anatomy and physiology: Taste buds, located mainly on the tongue within the papillae (fungiform, foliate, circumvallate), contain taste receptor cells. These cells detect chemical compounds dissolved in saliva and transduce signals through ion channels and G-protein coupled receptors. Signals travel via the facial nerve (cranial nerve VII) through the chorda tympani, the glossopharyngeal nerve (IX), and the vagus nerve (X) to the nucleus of the solitary tract in the brainstem. From there, information is projected to the thalamus and then to the gustatory cortex in the insula and frontal operculum.

Basic flavors: traditional classification recognizes five basic tastes—sweet, sour, salty, bitter, and umami—though newer research acknowledges additional taste modalities and complex flavor perception arising from aroma and texture. Gustatif perception is modulated by aroma, temperature, and concentration, and is influenced by genetics, experience, and health status.

Clinical and practical aspects: Disturbances include ageusia (loss of taste), hypogeusia (reduced taste), and dysgeusia (distorted taste). Gustatory testing uses taste strips, solutions, or electrophysiological methods, particularly in clinical evaluation and sensory analysis in food science.

In gastronomy and sensory research, the term gustatif also describes the qualitative assessment of taste in foods and beverages, as well as the design of tasting experiences and flavor profiling.
