Glutamatul, commonly referred to as glutamate, is the ionized form of the amino acid glutamic acid and its salts. Glutamic acid is a non-essential amino acid that serves as a building block for proteins and participates in various metabolic processes, including energy production and nitrogen metabolism. It can be found in free form in tissues and in many dietary proteins.

In the brain, glutamate is the principal excitatory neurotransmitter. It transmits signals between nerve cells by activating several receptor families, including NMDA, AMPA, and kainate receptors. Glutamatergic signaling is essential for synaptic plasticity, learning, and memory. The concentration and activity of glutamate in the brain are tightly regulated by transporters that shuttle the molecule between neurons and glial cells.

Glutamate also participates in the glutamate–glutamine cycle. After release, it is taken up by surrounding glial cells and converted to glutamine, which is then shuttled back to neurons and converted again to glutamate for reuse. In addition to its neurotransmitter role, glutamate is involved in amino acid metabolism, transamination reactions, and as a precursor to other important molecules such as GABA, the brain’s main inhibitory neurotransmitter.

Dietary glutamate is present in many protein-containing foods. Monosodium glutamate (MSG) is a widely used flavor enhancer derived from glutamate that contributes the umami taste to foods. Regulatory agencies generally recognize MSG as safe for the general population, though some individuals report sensitivity to high doses. High extracellular glutamate in pathological conditions can be neurotoxic, but normal dietary levels are not considered harmful for the vast majority of people.
