In food production, GDL serves as a leavening agent, acidulant, and coagulant. When GDL dissolves in water, it slowly hydrolyzes to form gluconic acid. This gradual release of acid is beneficial in baking, where it reacts with baking soda to produce carbon dioxide gas, causing doughs and batters to rise. As an acidulant, it can be used to provide a tangy flavor to foods. Its ability to form gluconic acid also makes it a useful coagulant in the production of tofu and certain cheeses, where it helps to denature proteins. GDL is also used in cosmetics and pharmaceuticals for its gentle acidic properties. It is generally recognized as safe (GRAS) by regulatory bodies for use in food.
