Esteriryhmään, scientifically known as the ester functional group, is a chemical group characterized by the general formula RCOOR', where R and R' are alkyl or aryl groups. This group is formed through a chemical reaction known as esterification, typically involving the reaction of a carboxylic acid with an alcohol in the presence of an acid catalyst. The ester linkage is formed by the removal of a water molecule.

Esters are prevalent in nature and have a wide range of applications. Many esters are known for their pleasant, fruity aromas and are therefore used as flavorings and fragrances in food products, perfumes, and cosmetics. For example, ethyl acetate has a sweet, fruity smell and is used as a solvent and in artificial fruit essences. Isoamyl acetate is responsible for the banana scent.

Beyond their sensory properties, esters play important roles in biology. Fats and oils, essential components of living organisms, are triglycerides, which are esters formed from glycerol and fatty acids. Phospholipids, another class of lipids, also contain ester linkages and are crucial components of cell membranes.

Industrially, esters are used as solvents, plasticizers, and in the production of polymers. For instance, phthalates, a class of esters, are commonly used as plasticizers to increase the flexibility and durability of plastics like PVC. Polyesters, a major class of synthetic polymers, are formed by the esterification of dicarboxylic acids with diols. Examples include polyethylene terephthalate (PET), used in beverage bottles and synthetic fibers. The hydrolysis of an ester, the reverse reaction of esterification, can regenerate the parent carboxylic acid and alcohol, a process often facilitated by acids or bases.
