Disznótor is a traditional Hungarian pig slaughtering festival and process that typically takes place in late autumn or early winter. It is a significant communal event, often involving extended family and neighbors working together to process a pig. The primary purpose of disznótor is to prepare a large quantity of meat and fat for consumption throughout the year.

The process begins with the slaughter of the pig, after which it is scalded and scraped. The carcass is then meticulously butchered into various cuts. Different parts of the pig are used for a variety of traditional Hungarian dishes. Lard is rendered and stored, and a significant portion of the meat is used to make sausages, particularly kolbász, and also other cured and smoked products like szalonna (bacon).

Disznótor is more than just a practical necessity; it is a social occasion. Friends and family gather, and the work is often accompanied by food, drinks, and lively conversation. Traditional foods prepared during the event include fresh blood sausage (véres hurka) and liver sausage (májas hurka), often made from the organs and blood of the pig. The entire process can last for one or two days, culminating in a shared meal where the freshly prepared delicacies are enjoyed. While less common in urban settings today, disznótor remains a cherished tradition in many rural Hungarian communities, preserving culinary heritage and fostering social bonds.
