Diasetyyliä, or diacetyl, is a volatile organic compound with the chemical formula C4H6O2. It is a diketone and is naturally produced during the fermentation of alcoholic beverages, particularly beer and wine, by certain yeast strains. Diacetyl is also found in small amounts in various dairy products, such as butter and cheese.

The characteristic aroma of diacetyl is often described as buttery or toffee-like. In beer, diacetyl is considered a desirable flavor compound at low concentrations, contributing to the creamy mouthfeel and aroma of certain styles like certain lagers and ales. However, at higher concentrations, it can be perceived as an off-flavor, reminiscent of overripe apples or butterscotch, and is generally undesirable in most beer styles. Brewers often employ specific yeast strains and fermentation control techniques to minimize diacetyl production or to allow for its metabolism into less aromatic compounds.

In industrial settings, diacetyl is also used as a flavoring agent in some food products, notably microwave popcorn, where it imparts a buttery taste. However, prolonged exposure to high concentrations of diacetyl vapor has been linked to serious respiratory health issues, including a severe and irreversible lung disease known as bronchiolitis obliterans, sometimes referred to as "popcorn lung." This occupational hazard has led to increased regulation and awareness in industries where diacetyl is used.
