Cashewpähkinöitä, known scientifically as Anacardium occidentale, are seeds that grow from the cashew apple. While often referred to as nuts, they are botanically classified as seeds. They are kidney-shaped and attached to the bottom of the cashew apple, a fleshy, pear-shaped accessory fruit. The cashew tree is native to northeastern Brazil and is now cultivated in tropical regions worldwide, with significant production in Vietnam, India, and Ivory Coast.
The edible cashew seed is encased in a double shell. The inner shell contains a caustic oil,
