There are three main types of carrageenan, designated as kappa, iota, and lambda, which differ in their chemical structure and properties. Kappa carrageenan forms strong, brittle gels in the presence of potassium ions. Iota carrageenan forms elastic gels and is often used in dairy products to prevent syneresis. Lambda carrageenan does not form gels but acts as a thickening agent.
