Aquavit, also known as akvavit, is a distilled spirit that is primarily produced in Scandinavia. Its defining characteristic is the flavoring derived from caraway and/or dill seeds. Other botanicals may also be used in its production, such as anise, fennel, coriander, and citrus peel. The base spirit is typically made from grain or potatoes. Aquavit is traditionally clear, although some varieties are aged in oak casks, which imparts a yellowish hue and can add notes of vanilla and oak.
