Amiinikyliyhdisteistä, often referred to as amino acids, are organic compounds that serve as the building blocks of proteins. They are characterized by the presence of both an amine group (containing nitrogen) and a carboxyl group (containing carbon and oxygen) attached to a central carbon atom, known as the alpha-carbon. The rest of the molecule is determined by a side chain, also called an R-group, which varies among the different amino acids.

There are twenty standard amino acids that are commonly found in proteins. These can be classified based on the properties of their R-groups, such as whether they are polar, nonpolar, acidic, or basic. This variation in R-groups dictates the unique three-dimensional structure and function of the proteins they form. For instance, hydrophobic R-groups tend to cluster away from water, influencing protein folding.

Amino acids are linked together by peptide bonds to form polypeptide chains. This process, known as protein synthesis, occurs within ribosomes in cells. The sequence of amino acids in a polypeptide chain is determined by the genetic code, inherited from DNA. The order of these amino acids is crucial for the proper folding and functionality of the resulting protein, which can then carry out a vast array of biological tasks, from enzymatic catalysis to structural support. Beyond protein synthesis, certain amino acids also play roles as neurotransmitters or metabolic intermediates.
