Alküülestrid, commonly known as esters, are a class of organic compounds formed from the reaction of a carboxylic acid with an alcohol. This reaction, known as esterification, typically requires an acid catalyst and results in the formation of an ester molecule and a water molecule. Esters are characterized by their often pleasant, fruity aromas, which makes them widely used in the food and fragrance industries. For example, ethyl acetate is found in nail polish remover and artificial fruit flavorings, while isoamyl acetate has a banana-like scent. Many natural fats and oils are also esters, specifically triglycerides, which are esters of glycerol and fatty acids.

The properties of an ester can be significantly altered by changing the R and R' groups. For instance, shorter chain esters tend to be more volatile and have lower boiling points compared to longer chain esters. Hydrolysis, the reverse reaction of esterification, can break down esters back into their parent carboxylic acid and alcohol, often facilitated by acids, bases, or enzymes.
