Undecanoic

Undecanoic acid, also called undecylic acid, is a saturated fatty acid with 11 carbon atoms (C11:0). Its chemical formula is C11H22O2. The molecule features a carboxyl group at one end and a hydrophobic hydrocarbon chain, making it a typical long-chain fatty acid.

Natural occurrence and production: In nature, undecanoic acid occurs only in trace amounts in some fats and oils. Industrially, it is produced from unsaturated precursors such as undecylenic acid by hydrogenation, or by hydrolysis of undecyl esters followed by purification.

Properties: It is relatively insoluble in water and exhibits solubility in various organic solvents. As with other carboxylic acids, undecanoic acid has a typical carboxylate pKa around 4.8. The physical state at room temperature can be a waxy solid or a liquid, depending on conditions and purity.

Applications: Undecanoic acid serves as a building block in the synthesis of esters used in fragrances and flavors, and it finds use in cosmetics and lubricants. Esters and salts of undecanoic acid can act as surfactants or plasticizers in various formulations.

Safety: The substance has low acute toxicity, but concentrated forms can be irritating to skin and eyes. Proper handling includes wearing gloves and eye protection, and storing away from heat and oxidizing agents. As with many fatty acids, it should be used in accordance with appropriate safety regulations.
