Ultrahögtemperaturbehandlade, often abbreviated as UHT, refers to a thermal processing method primarily used for food products, most notably milk. This process involves heating the product to a very high temperature for a very short duration, typically around 135-150 degrees Celsius (275-302 degrees Fahrenheit) for 1-2 seconds. The objective of UHT treatment is to kill virtually all microorganisms, including bacteria, yeasts, and molds, as well as their spores, which can cause spoilage.

This extensive sterilization allows UHT-treated products to have a significantly longer shelf life compared to conventionally pasteurized products, often remaining stable at room temperature for several months before opening. The rapid heating and cooling minimize negative impacts on the product's nutritional value and sensory characteristics, although some minor changes in flavor and color may occur.

UHT processing is widely applied to milk, cream, juices, and other liquid food products. The technology requires specialized equipment to achieve the precise temperature and time controls necessary for effective sterilization while preserving product quality. Its widespread adoption has revolutionized food distribution and accessibility by reducing the need for constant refrigeration during transport and storage.
