Torula

Torula, also known as Torula yeast or torulopsis, is a genus of yeast. Historically, Torula was a broader classification used for several types of yeast, particularly those lacking a known sexual reproductive state, often referred to as "imperfect fungi." Modern taxonomic classifications have refined this, and many species previously placed under Torula are now categorized under other genera, such as Candida.

These yeasts are common saprophytes, meaning they live on dead organic matter. They can be found in various environments, including soil, water, and on plant surfaces. Torula yeasts are often non-pathogenic to humans, though some species can be opportunistic pathogens, particularly in individuals with weakened immune systems. They are sometimes used in industrial processes, such as in the production of certain food flavorings due to their savory taste, and have been explored as a source of nutrients.
