Szorbátokat, commonly known as sorbates, are a group of chemical compounds that are salts or esters of sorbic acid. The most frequently used sorbate is potassium sorbate, a widely employed food preservative. Sorbic acid itself is a naturally occurring organic compound, but its salts, like potassium sorbate and calcium sorbate, are more soluble in water, making them easier to incorporate into food products. Sodium sorbate is another less common variant.
