Suurvorming

Suurvorming, or acid formation, is the process by which acids are produced, causing a system to become more acidic. The term is used across disciplines such as chemistry, environmental science, agriculture, and food science. In its broad sense it describes the appearance of hydrogen ions (H+) and a resulting decrease in pH.

Mechanisms of suurfoming include chemical reactions such as the dissolution of carbon dioxide in water to form carbonic acid, oxidation of sulfide minerals yielding sulfuric acid, and the nitrification of ammonium producing nitric acid. Biological processes, including fermentation and metabolism, also generate organic acids such as lactic, acetic, and citric acids, contributing to acidity in foods, soils, and waters.

Contexts where suurfoming is important include the environment, agriculture, and food science. In environmental contexts, acid formation affects soils and surface waters and is often linked to acid rain or industrial emissions. In soils, acidification can alter nutrient availability and mobilize toxic metals; in oceans, increased CO2 lowers pH and impacts calcifying organisms. In agriculture, prolonged acid formation lowers soil pH and can reduce crop yields, with lime application and buffering capacity management as common remedies. In food science, controlled acid formation is central to preservation and flavor development, as seen in fermentation (lactic acid) and pickling (acetic acid).

Measurement and implications: acidity is typically quantified by pH and titratable acidity. High rates of acid formation can influence ecosystem health, soil fertility, water chemistry, and food quality, guiding strategies for mitigation, such as buffering, liming, or process control in fermentation.
