Souvas

Souvas, also known as gyros or doner kebabs in other cultures, are a popular street food dish originating from Greece. The core of a souva is thinly sliced meat, typically pork, chicken, or lamb, which is seasoned and cooked on a vertical rotisserie. As the meat slowly rotates and cooks, the outer layers are shaved off in thin strips.

These shaved meat pieces are then placed into a soft, leavened flatbread, usually a pita or a thicker, fluffier bread called a "pitta" in Greece. Accompanying the meat are a variety of fresh toppings and sauces. Common additions include chopped tomatoes, sliced onions, and sometimes lettuce or parsley. The most iconic sauce is tzatziki, a creamy yogurt-based sauce mixed with grated cucumber, garlic, dill, and lemon juice. Other sauces like mustard or ketchup may also be offered.

The souva is typically folded or wrapped to contain all the ingredients, making it a convenient and portable meal. It is a staple in Greek tavernas and street food stalls, enjoyed by locals and tourists alike for its savory flavors and satisfying texture. Variations exist across different regions and individual vendors, with some offering different meat choices or unique sauce combinations.
