Carbohydrates can be classified into three main categories based on their molecular structure. Monosaccharides are the simplest form of carbohydrates, consisting of a single sugar unit. Examples include glucose, fructose, and galactose. Disaccharides are formed when two monosaccharide units are linked together. Common disaccharides are sucrose (table sugar), lactose (milk sugar), and maltose. Polysaccharides are complex carbohydrates made up of long chains of monosaccharide units. These include starch, glycogen, and cellulose, which have diverse roles such as energy storage and structural support.

In humans and animals, carbohydrates are broken down into glucose, which is then used for cellular respiration to produce ATP, the energy currency of the body. Excess glucose is stored as glycogen in the liver and muscles for later use. In plants, carbohydrates like starch serve as a primary energy reserve, while cellulose provides structural integrity to cell walls. Dietary fiber, a type of carbohydrate that the human body cannot digest, plays an important role in digestive health. The availability and metabolism of carbohydrates are crucial for maintaining bodily functions.
