Sluoksniais

Sluoksniais is a Lithuanian term used to describe pastries and baked goods that are made with laminated dough, meaning dough folded with fat to create multiple thin, alternating layers. The word derives from sluoksnis, meaning layer. In culinary use, sluoksniais refers to items produced by repeatedly rolling and folding dough with fat to build flakiness.

The technique behind sluoksniais is the same general principle found in other cuisines’ laminated doughs, such as puff pastry or croissant dough. Key steps typically include preparing a sturdy dough, enclosing it with a block of fat, resting the dough, and performing multiple rounds of rolling and folding to develop many layers. Correct chilling between folds helps maintain distinct layers and prevents the gluten from becoming too strong, which would reduce flakiness. Baking is usually done at a sufficiently high temperature to generate steam and cause the layers to puff apart.

In Lithuanian baking, products described as sluoksniuotos tešlos (laminated dough) items can be either sweet or savory. Common examples include layered pastries with fillings such as fruit, sweet cheese, or cream, as well as savory pies with fillings like mushrooms, meat, or vegetables. The term is widely used in home cooking instructions and professional bakeries to distinguish laminated pastries from those made with shortcrust or other doughs.
