Siiditeeks
Siiditeeks is a traditional Estonian fermented tea beverage. It is made by steeping a symbiotic colony of bacteria and yeast, commonly referred to as a SCOBY, in sweetened tea. The SCOBY consumes the sugar and produces a range of organic acids, enzymes, and probiotics. The resulting liquid is often slightly fizzy and has a complex flavor profile that can range from tart to sweet, with notes of vinegar and fruit depending on the fermentation time and added flavorings.
