Piiritamise

Piiritamise is a Finnish term that broadly refers to the process of distillation, particularly in the context of producing alcoholic beverages. It encompasses the techniques and equipment used to separate and concentrate ethanol from a fermented mixture. Historically, piiritamise was a common practice in rural Finland, often carried out in homemade stills to produce spirits for personal consumption or local sale. The raw materials for fermentation could vary, including grains, potatoes, or berries.

The distillation process involves heating the fermented mash to a temperature at which alcohol vaporizes, and then cooling the vapor to condense it back into a liquid with a higher alcohol concentration. Various types of stills, from simple pot stills to more complex column stills, have been employed in piiritamise.
