Pernod

Pernod is a French pastis, a clear anise-flavored liqueur typically bottled around 40% alcohol by volume. It is produced by Pernod Ricard and is closely associated with the aperitif culture of France. The brand originated with Pernod Fils, a distillery founded in Pontarlier in 1805 by Henri-Louis Pernod to produce absinthe.

After absinthe was banned in the early 20th century, Pernod Fils adapted to a milder anise-based liqueur and began marketing Pernod as a pastis in the 1930s. The product competed with other pastis brands such as Ricard. In 1975 Pernod merged with Ricard to form Pernod Ricard, a multinational company that became one of the world's largest producers of wines and spirits.

Production and flavor: Pernod is produced by infusing neutral alcohol with anise and other botanicals such as fennel and licorice. The exact recipe is a trade secret. The liqueur is typically clear; when water is added, essential oils cause it to louche and take on a milky appearance. It is usually served as an aperitif with ice and cold water, in a ratio that emphasizes the anise flavor.

Distribution and usage: Pernod Ricard markets Pernod worldwide, often alongside other pastis brands. In France, it remains a common ingredient in cocktails and is a staple of casual apéritifs. The brand has diversified its portfolio with other pastis and anise-flavored products over the years.
