Pektinolyysiä refers to the enzymatic breakdown of pectin. Pectin is a complex polysaccharide found in the cell walls of plants, particularly in fruits and vegetables. It plays a crucial role in providing structural support and determining the texture of plant tissues.

The process of pektinolyysiä is carried out by a group of enzymes collectively known as pectinases.
