The name is derived from the Kyrgyz language, where "ot" means "fire," "star" refers to a type of flatbread, and "bekohane" translates to "stuffed." This dish is a hearty, slow-cooked meal that reflects the nomadic culinary traditions of the region, where ingredients were often preserved or cooked in communal settings around a fire.

The dish consists of a thick, doughy flatbread called *beshbarmak* (though not identical to the more famous Kazakh version) or a similar type of unleavened bread, which is stuffed with a filling of lamb or mutton, onions, and spices.
